Spring is here, and summer is just around the corner! That’s means lots of fun summer traveling ahead!
That also means an increased need for portable, easy, delicious snacks!
Now, I’ve already expressed my great love for our homemade “Larabar” creations! So, when the hubs came home with some golden, dried pineapple, I knew it was time to create a new, summer-ready variation.
And what says summer more than piña coladas, baby!!
This time around, I decided to mix things up and shape our nommy mixture into a snack bite rather than a bar. Bars, hearts, bites…whatever the shape, one thing is for sure: these little gems are just what you need for tummy bliss!
Raw Piña Colada Snack Bites
Ingredients:
- Oats (rolled) - 2/3 cup
- Coconut flakes (dried and unsulphured) - 1 cup
- Pineapple rings (dried and unsulphured) - 8 rings
- Salt (pure) - pinch or two
Instructions:
Combine all of the ingredients in a food processor (I used our incredible Vitamix). Blend until smooth.
Place the mixture in zip-top baggies, or between two pieces of plastic wrap, and form into the shape of your choice — bites, squares, stars, hearts, bars…you name it!
Roll in coconut flakes, if desired. Nom away!!
