Memorial Day is coming to an end. In most parts of the US, that also means pools are officially opened, and summer is here!
What goes better with summer than lime, avocados, and laziness relaxation?
This yummy dip wraps those lovely tastes and the ease of summer all into one, big bowl of goodness! Feel free to enjoy now, or give yourself a little bit of summer any time of year!
Black Bean Avocado Dip
Ingredients:
- Beans (Black) - 15 oz. can, drained and rinsed
- Avocados - flesh of 1
- Limes - juice of 1 (add the zest as well, if you'd like it extra limey!)
- Garlic (fresh) - 2 cloves, peeled and coarsely chopped
- Salt (pure) - according to taste
- Red pepper (crushed) - pinch or 2
- Cumin (ground) - 1/2 tsp.
- Cilantro (fresh) - 1/3 cup leaves, plus extra for sprinkling
Instructions:
Add all of the ingredients in a food processor (I could not live without my Vitamix). Blend until smooth.
That's all there is to it!! :)
Sprinkle with a bit of extra cilantro, and serve with corn chips, veggies, crackers...you name it!
