ASPARAGUS ON SALE?!?
Could it be true???
Yes, fellow NOMsters, I and my happy tummy are living proof that it does exist!!
At this point, I guess it goes without saying that I completely adore asparagus. After all, it has the rare quality of being absolutely unique — yet versatile and easily paired with just about anything.
Oh, and did I mention it’s incredibly delicious??
Especially when roasted or steamed until just barely tender.
Add some Kalamatas and Feta into the mix, and I am one happy camper — and a delectably satiated camper at that!
Mediterranean Roasted Asparagus
Ingredients:
- Coconut oil (virgin) - 3 T, melted
- Asparagus - 1 large bunch, ends trimmed
- Garlic (fresh) - 2 cloves, peeled and diced
- Salt (pure) - according to taste
- Red pepper (crushed) - pinch
- Lemons - juice of 1
- Olives (Kalamata) - 20, pitted and chopped
- Cheese (Feta) - for sprinkling
Instructions:
Preheat the oven to 425 degrees F.
Combine the first 5 ingredients in a large baking dish. Toss well.
Bake for 10 to 12 minutes.
Remove the dish from the oven. Drizzle with the lemon juice, stir in the olives, and sprinkle with cheese.
Enjoy each bite of savory goodness!
