Okay, okay…so I know technically the definition of hummus demands chickpeas…but you get the idea!  Plus, they’re still peas…so that counts, right?? 😉
The hubs recently came home with two HUGE bags of frozen green peas he found on mega sale. Â It has been ages since we’ve had green peas on hand, so this made the experimental chef in me very, very happy!

For now, I think you’ll enjoy this new twist on hummus — and the nommy combination of awesome flavors it brings with it!
Green Pea and Mint Hummus
Ingredients:
- 1 pound frozen green peas, thawed
- 1 clove fresh garlic, peeled and coarsely chopped
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh mint leaves (about 3 to 4 sprigs), chopped
- Juice of one lemon
- Pinch of crushed red pepper
- Sea salt, according to taste
- 1/3 cup freshly grated Romano cheese (or cheese of your choice; I think feta would be absolutely divine)
Combine all of the ingredients (except for a few tablespoons of the green peas) in a food processor and blend until smooth and well combined.
Sprinkle the hummus with the reserved green peas and a bit of extra cheese, if desired. Â
As with all hummus, there are countless ways to nom it up! Â Enjoy as a dip for veggies or chips. Â Use in place of tomato sauce on your next pizza. Â Spread over you favorite whole grain pitas, naan, or crostini. Â
The possibilities are endless!
