After falling head-over-heels for my cinnamon bun baked oatmeal, I knew I had to experiment with other flavors!
So, where did I turn next??
Why, chocolate, but of course!
Hey, if it’s not summer yet, and I gotta go to work…at least I can start my day with chocolate, right?!
If, like me, you sometimes need a chocolate pick-me-up to get yourself going, search no further! Just pop this baby in the oven, and in the time it takes to do your hair and make-up, it will be ready for you! Ummm…and for you guys out there…in the time it takes to play a game on your iPhone…check your email…get in a few reps with free weights?
Whatever the case may be, you are about fifteen minutes from chocolaty goodness! And not just any chocolaty goodness. This baked nomminess also happens to be sugar-free, packed with antioxidants, and filled with fiber.
(Serves 1)
Ingredients:
- 1/2 cup whole rolled oats
- 1 T unsweetened cocoa powder
- 1 T cacao nibs (or dark chocolate chips, if you prefer)
- Pinch of sea salt
- 1 tsp. pure vanilla extract
- 1/4 cup super ripe mashed banana (about 1/2 small banana)
- 1 egg, whisked
- 1 T melted raw coconut butter (or make your own!)
- 1 tsp. unsweetened cocoa powder
In a small bowl, stir together the melted coconut butter and 1 teaspoon cocoa powder.
And, most importantly, feel good about starting your day with chocolate! 🙂
