***WARNING: This dip is incredibly addictive. Like, eat-the-whole-thing-in-one-sitting addictive!!!***
Don’t say I didn’t warn you.
The good news is that it’s also incredibly healthy.
You get a hefty dose of protein, fiber, complex carbs, healthy fats, and antioxidants…all with the taste of nommy cookie dough.
That’s right.
Cookie dough.
Ahhhh, just those two words bring back joyous memories of licking spoons and beaters like there was no tomorrow.
So, naturally, being the brilliant person that I am, what did I decide to pair with this delectable dip??
You guessed it.
My incredibly addictive graham crackers. You know I can’t refuse graham crackers.
Putting these two things together made for an irresistible combination.
What was I thinking?? I guess I’m a glutton for punishment.
But, as I told my hubby the next day when emerging from my food coma, it was totally worth it.
Chocolate Chip Cookie Dough Dip
Ingredients:
- 1 can garbanzo beans (aka chickpeas), drained and rinsed
- 1 1/2 T pure vanilla extract
- 1/8 tsp baking soda
- Pinch of sea salt
- 1/4 cup date sugar
- 4 T of your favorite nut butter
- 1 T coconut flour (you could also use 3 T ground flax seed or rolled oats)
- 1/4 cup to 1/2 cup milk, according to desired consistency
- 1/4 to 1/3 cup cacao nibs or dark chocolate chips
Combine all of the ingredients, except the cacao nibs or chocolate, in your food processor. Process until smooth and well blended.
Fold in the cacao nibs or chocolate chips.
And that’s it! Super easy…super healthy…super nommy!!!
Nom it up with whole grain graham crackers (make your own!), fresh fruit, or straight up on its own! You could also add a dollop on top of your favorite brownie or ice cream sundae…the possibilities are endless!
