It’s no secret that fresh berries are extremely healthy. After all, they are loaded with antioxidants, fiber, vitamins, and minerals.
However, as much as I love my berries (and just about any fruit), my latest addiction that I’d like to feature is raw coconut butter.
Seriously.
This stuff is incredible.
It makes an awesome dip, spread, and icing…and it’s also fantastic devoured straight off the spoon! 🙂
Not only is coconut butter insanely delicious, but it’s also insanely healthy. Coconut oil, coconut butter, coconut milk…basically every bit of the coconut can do your body good!
Plus, the coconut butter and berries give this delicious topping all the sweetness its needs. In fact, not only is there no added sugar in this syrup, but there is also none added in these nommy waffles I paired with it, either!
Warm Berry Syrup with Coconut Butter
(Serves 4)
Ingredients:
- Drizzle of extra virgin (or virgin) coconut oil
- 10 oz. organic frozen raspberries
- 12 oz. fresh blackberries
- Raw coconut butter (or make your own!), according to taste (i.e. at least a spoonful for each serving…although you will want to eat the entire jar; you have been warned!)
Pour the warm syrup over each serving of waffles, pancakes, ice cream…you name it! Top each serving with a dollop of coconut butter. If you’re feeling extra decadent, sprinkle each serving with cacao nibs (or dark chocolate chips, if you prefer).
Prepare for extreme nomminess!
UM, I have not yet been introduced to coconut butter, but since I love all things coconut, I will have to search this out. Where do you find it?
Get ready to fall madly in love!!! I am seriously obsessed with it. You can get it at Central Market, Whole Foods, or on Amazon. It IS expensive, though. That’s why I now make my own!! I just tried it for the first time yesterday…so stay tuned for the coming how-to blog post! 🙂
I made this with banana because we have to do a shopping and it’s the only fruit I had left. Yummy on those coconut waffles with some carob chips.
Yummmmmm! Bananas and coconut butter (or any nut butter, for that matter!) sounds fantastic! You sound a lot like me — experiment with whatever ingredients you have on hand! 🙂 I will definitely have to try that variation ASAP!
