Not only are marinades easy, but they are fun. They give the experimental chef in me a chance to come out to play…well, even more so than usual, that is. 😉
For this recipe, I knew I was in the mood for some lime…but beyond that, I literally just started tossing in spices I love.
The results? An irresistible combination of flavors…sweet, spicy, and full of zest…in each and every bite.

Citrus and Spice Marinade
(Serves 4)
Ingredients:
- 1/4 to 1/3 cup extra virgin olive oil
- 1/2 medium orange, juiced
- 1 medium lime, juiced
- 3 fresh garlic cloves, finely chopped
- 1 tsp ground cumin
- 1 tsp ground ginger
- 1 tsp chili powder
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- Pinch of crushed red pepper
- Sea salt, according to taste
Rinse your meat and pat it dry with a paper towel. Pierce each steak several times with a fork (this allows the marinade to seep into the meat a little more easily).
Add your meat to the marinade mixture and allow it to marinate for several hours in the refrigerator.
That’s all there is to it! Fire up the grill and enjoy!
OH, and I also like to squeeze a little fresh lime juice on the steaks just before serving. Nom, nom, nom!
