Sometimes, I just can’t contain myself.
And why would I want to? The sweetness of coconut combined with the spicy fire of curry…and then you go and add moist, delectable chicken nuggets to the mix! Ohhhhhhhhhh…I just might never come out of my food coma. 😉
So, who says chicken nuggets can’t be healthy?! This recipe just goes to prove them wrong! I already proclaimed my love for the goodness of coconut and all it’s health benefits in my last post. But if those cookies weren’t enough for you, here’s a nommy way to enjoy it beyond just a sweet treat!

Coconut Curry Chicken Nuggets
(Serves 4)
Ingredients:
- 1 pound skinless boneless chicken breast, chopped into two-inch pieces
- 2 T extra virgin coconut oil, melted
- 3/4 cup shredded unsweetened coconut
- 3 tsp curry powder
- Pinch of red pepper
- Sea salt, according to taste
