I thought absolutely nothing could top the incredible flavor of our Sun-dried Tomato Mashed Cauliflower, but this creamy dish sure is giving it a run for its money!
After all, can you really ever go wrong with Kalamata olives and basil??
(Clearly that was really a rhetorical question…the only answer is a resounding no!)
Like our past mashed cauliflower creations, this dish is super quick, super easy, and SUPER yummy!! Prepare yourself for the amazing burst of flavor that can only come from Kalamatas.

Kalamata Basil Mashed Cauliflower
Ingredients:
- Cauliflower - 1 head, steamed
- Garlic (fresh) - 2 cloves, peeled and chopped
- Greek yogurt (plain) - 1/3 cup
- Olive oil (extra virgin) - 1 T
- Olives (Kalamata) - 20, pitted
- Lemons - juice of 1/2
- Salt (pure) - according to taste
- Red pepper (crushed) - pinch
- Basil (fresh) - 5 large leaves, coarsely chopped
Instructions:
Combine all of the ingredients, except the basil, using an immersion blender (I LOVE my Cuisinart), or food processor, until smooth. Add the basil, and pulse several times until it is evenly distributed.
