I must admit, I am a sandwich junkie.
Seriously, I think if I had to, I could eat only sandwiches for the rest of my life and not be completely unhappy.
Those are big words coming from someone like myself, who lives to try new foods and different recipes.
But, you see, that’s just it: with sandwiches, the combinations and possibilities are virtually endless.
That being said, I had fallen into a rut with my packed lunches. As a result of my hectic weekday mornings, I basically found myself rotating between a turkey sandwich with Dijon mustard, a big ol’ salad, or — on days of absolute frenzy — random fresh fruits and veggies frantically tossed into my lunch tote.
Now, don’t get me wrong, to me, a classic turkey sandwich on whole grain sourdough bread simply can’t be beat.
But, you know that old phrase about “too much of a good thing”…?
Well, that’s exactly what had happened with me and my beloved turkey sandwich. I needed to mix things up. Fast.
Thankfully, this delicious spread was the perfect answer! Not only did it brighten up my lunchtime sammie, but it also made for an excellent dinnertime appetizer with fresh veggies for me and the hubby.
A yummy spread and dip in one recipe? Yes, please!
Avocado and Mint Yogurt Dip/Spread
Ingredients:
- Limes - 1/2, juiced
- Greek yogurt (plain) - 1 cup
- Avocados - one, peeled and pitted
- Mint (fresh) - 1/4 cup leaves
- Salt (pure) - pinch
Instructions:
Combine all of the ingredients in a blender or food processor, and process until smooth.
That's it! Instant goodness. :)
Spread on whole grain naan or pita bread, use as a nommy dip for veggies, or -- of course -- add a refreshing new twist to your favorite sammie! ;)
