So, what exactly is forbidden rice, you ask??
It’s a whole grain, ancient heirloom rice that is just as healthy as it is incredibly delicious.
In fact, forbidden rice — also known as black rice or purple rice — is loaded with antioxidants called anthocyanins, which are the same purple pigments found in blueberries and acai! It’s also an excellent source of magnesium, molybdenum, manganese, and phosphorous. Not to mention it packs a good dose of fiber, complex carbohydrates, and protein, too.
Oh, and it’s reallllllly pretty.
Seriously.
It puts those healthy pigments to good use as it cooks, and transforms from an inky black into a rich, deep, gorgeous purple!
It’s so lovely, you almost don’t want to eat it!
Almost.
Orange Broccoli Forbidden Rice
(Serves 4)
Ingredients:
- 3 cups warm, cooked forbidden rice (1 cup uncooked)
- 2 heads worth of broccoli florets, steamed
- 3 oranges, peeled and chopped
- 3 T all-natural stir fry sauce, or all-natural soy sauce
- 1 T pure Grade B maple syrup
- Sea salt, according to taste
- Pinch or two of crushed red pepper
- 2 tsp. ground ginger
- Sesame seeds or hemp seeds, for sprinkling
Combine the first eight ingredients in a large bowl, and mix until well-combined.
Sprinkle each serving with sesame seeds or hemp seeds.
That’s all there is to it!
Admire your bowl of deep-hued goodness, splashed with bits of bright orange and green…and dig in!!
