Oooooooooh, pesto. How I’ve missed you!!
You see, as you may remember I had quite a love affair with pesto.
Until my food processor bit the dust, that is.
In the depths of my despair, I finally took the plunge and invested in a Vitamix.
To all of you Vitamix lovers out there, you were absolutely right: It IS the BEST THING EVER!!!!!
I will never look back! 🙂
Naturally, I inaugurated the Vitamix into our kitchen family immediately by making our classic basil pesto.
Ahhhh, it was just as delicious as I remembered!!
But the best part?? It took only a fraction of the time to make as it used to take with my old food processor.
I. Was. Hooked.
Two days later, with a big ol’ batch of cilantro and several ripe avocados just itching to be used, this recipe was born!
I just know you will love it! 🙂
Cilantro and Avocado Pesto
Ingredients:
- 1/4 cup extra virgin olive oil
- Juice of one lime
- 1 fresh avocado, peeled and pitted
- 1 large bunch of fresh cilantro, stems removed (about 2 cups)
- 2 cloves fresh garlic, peeled and coarsely chopped
- 1/2 cup raw walnuts or almonds
- 1/2 cup freshly grated Romano cheese
- Sea salt, according to taste
- 1 tsp. ground cumin
Combine all of the ingredients in a high-power blender (Have I told you how much I love my new Vitamix??) or food processor.
Process until a smooth paste forms.
Enjoy in as many creatively nommy ways as you can! 🙂
ohh. nice alternative to basil! i’ll try this the next time we have avocados. i’d have to substitute walnuts/almonds with cashew though. cashew’s more common here in the philippines. =)
