I. Love. Cauliflower.
Lately, however, mashed cauliflower has become my absolute favorite way to enjoy this delicious veggie. Plus, believe it or not, I think the hubby likes it even better than I do!!
My proof? I got away with only one serving; the rest of the bowl was his.
I rest my case. 😉
Needless to say, if you enjoyed our original garlic and rosemary mashed cauliflower and you are a lover of lemon, prepare yourself to fall head over heels for this light and fluffy dish!
Lemon Basil Mashed Cauliflower
(Serves 4)
Ingredients:
- 1 head cauliflower, steamed
- 2 to 3 cloves fresh garlic, chopped
- Juice and zest of one lemon (we really adore our lemon, so half this amount if you would like just a hint of lemon)
- 1/3 cup plain Greek yogurt (make your own!)
- 1 T extra virgin olive oil
- Sea salt, according to taste
- Pinch of crushed red pepper
- 4 to 5 large basil leaves, coarsely chopped
Combine all of the ingredients, except the basil, using an immersion blender (I LOVE my Cuisinart), or food processor, until smooth. Add the basil and pulse several times until it is evenly distributed.
That’s all there is to it! Delicious, nutritious, and a snap to make?!?
