That’s right.
You see, things have been super busy in the NomEatNom household, so while I’ve been cooking up a storm, I haven’t been able to keep up with posting everything…so I’ve had a slight overflow of recipe posts “waiting in the wings.” I asked our fellow NOMsters on Facebook which recipe they’d like to see next, and Avocado Mashed Potatoes was crowned the victor! Which worked out just perfectly for you, because I just know you are going to love them! 😉
First, let me warn you: prepare yourself for extreme creaminess!
Seriously.
I know, I know, I shouldn’t be surprised. The truth is, after seeing the hefty dose of moist lusciousness that avocado brought to the table in our Dark Chocolate Avocado Pancakes, I did indeed expect these mashed potatoes to be extra creamy. Even still, I wasn’t the least bit prepared for the smooth, velvety goodness wrapped up in these flavorful potatoes!
Avocado Mashed Potatoes
Ingredients:
- Potatoes (red) - 2 lbs., chopped
- Avocados - 2, pitted and peeled
- Greek yogurt (plain) - 1/3 cup
- Garlic (fresh) - 2 fresh cloves, peeled and coarsely chopped
- Cilantro (fresh) - 1/3 cup leaves, chopped
- Salt (pure) - according to taste
- Red pepper (crushed) - 1/4 tsp.
- Limes - Juice of one
Instructions:
Steam or boil the potatoes until tender.
Combine the potatoes and all of the remaining ingredients in a large bowl, and mix with an immersion blender (I LOVE my Cuisinart), or food processor, until smooth.
