Summer has ended, but that doesn’t mean you have to put away your grill just yet! In fact, if you love your George Foreman Grill as much as I do, grilling season never has to end. 😉
For this yummy dish, I basically took a number of the things I adore about Mediterranean cuisine and pounded them all into one perfect patty!
Kalamata olives, fresh mint, creamy Greek yogurt…NOM NOM NOM!!!
You can even make a few batches ahead of time, and then freeze them for later use. This can be especially helpful if you sometimes suffer from a crazy, hectic schedule like me!
Greek Turkey Burgers
(Serves 4)
Ingredients:
- 1 lb. ground turkey breast
- 4 cloves fresh garlic, finely diced
- 20 Kalamata Olives, chopped
- 1/3 to 1/2 cup fresh mint leaves, chopped
- 1/4 cup plain Greek yogurt (make your own!), plus a bit extra for topping
- Juice and zest of 1/2 lemon
- Sea salt, according to taste
- Pinch of crushed red pepper
- 1 cucumber, thinly sliced
- 4 sprouted whole grain hamburger buns
Combine the first eight ingredients in a large bowl, and mix until well-combined.
Shape the mixture into four patties.
Grill the burgers until they are cooked through.
Meanwhile, toast the hamburger buns.
Top the bottom half of each bun with one patty, cucumber slices, and Greek yogurt. Sprinkle with extra mint, if desired. Place the remaining bun half on top, and dig in!!
