After loving every bite of both my Five Minute Coconut Flour Chocolate Muffin and my Cinnamon Bun Baked Oatmeal, I did what I’m often known to do: Â combined their powers to create epic nomminess!!
I know it makes for a looooong recipe title, but trust me, the results are most definitely worth it!
Five Minute Coconut Flour Cinnamon Bun Muffin
(Serves 1)
Ingredients:
- 1/2 T coconut flour (make your own!)
- 1/2 tsp. aluminum-free baking powder
- 1/2 tsp. ground cinnamon
- Pinch of sea salt
- 1/4 cup unsweetened applesauce
- 1 egg, whisked
- 1/2 tsp. pure vanilla extract
- 1/2 T pure coconut butter (make your own!)
In a small bowl, combine the coconut flour, baking powder, cinnamon, and sea salt. Â Mix well.
Add the vanilla extract, whisked egg, and applesauce. Â Mix until the dry ingredients are moistened.
Place the batter in a large, greased coffee mug, cereal bowl, or dish of your choice.  I purposefully put mine in a small dessert glass so that the batter would overflow and I could feel like a true experimental chef in my laboratory and make for fun pictures. 🙂
Microwave on high for about 3 minutes.
(Note: Â If you prefer to use the oven, bake in an oven-safe dish at 350 degrees F for about 15 minutes. Â When choosing your dish, remember that the coconut flour will expand.)
When your muffin is ready, drizzle the coconut butter on top.
Dig in!
(This recipe can be easily doubled, tripled, etc. if you’re feeding a crowd…or just can’t stop at one!)
