The hubby and I are now in the midst of our Spring Holy Days. This means a wonderful time of spiritual growth and fellowship.
However, this also means deleavening our entire home…which means we’ve spent the past two weeks frantically cleaning and eating!
So, what was at the top of our list to create in order to use up the last of our yeast, you ask??
Why PIZZA, but of course!
And not just any pizza — but pizza with a delicious, homemade crust and topped with our absolute favorite Mediterranean goodies: mushrooms and Kalamatas, baby!
Mushroom and Kalamata Pizza
Ingredients:
- Whole Grain Einkorn and Oat Pizza Crust - 1
- Garlic (fresh) - 2 cloves, peeled and diced
- Tomatoes (vine-ripe) - 1 large, sliced
- Mushrooms (fresh) - 5 oz., sliced
- Olives (Kalamata) - 20, pitted and sliced
- Cheese (Mozzarella) - 3 oz., shredded
- Italian seasoning (dried) - for sprinkling
Instructions:
Preheat the oven to 450 degrees F.
Spread the garlic over the crust. Top with the tomatoes, mushrooms, and olives. Sprinkle the cheese and seasoning evenly on top.
Bake for about 12 minutes.
Remove the pizza from the oven.
Slice, serve, and devour!!
