Mmmmmmmmmmmm, avocado!
How can you not love its velvety goodness??
The truth is, I actually used to shrink away at just the mere thought of eating avocados.
I know, I know. What was I thinking?!?
However, after hearing again and again, about all of the fantastic health benefits packed in this one, little green fruit, I knew I had to change my ways.
See what I mean?? Super, duper, incredibly healthy! This little fruit doesn’t mess around.
Determined to take advantage of this nutritional powerhouse, I slowly began working avocados into my diet bit by bit, and now I absolutely LOVE them. I’m not saying this will work with everything; I have tried — and failed — numerously using this same strategy with fish. However, I am so incredibly happy that it did work with avocados! Looking back now, I don’t know how I ever lived without them!
From classics, like guacamole (or even Guacamole Hummus!), to sweet treats, like Avocado and Lime Frozen Yogurt, to innovative culinary delights, like this Mint Avocado Frosting, this creamy, dreamy fruit does it all!
Which is why I felt ever so confident when entering my latest kitchen experiment: Avocado Pasta Sauce.
I am thrilled to report that the avocado’s reputation will continue to go untarnished. This pasta was absolutely, positively delicious!
Plus, it’s amazingly simple to throw together! It’s a win-win! 🙂
Mexican Pasta with Creamy Avocado Sauce
(Serves 4)
Ingredients:
- 12 oz. whole wheat pasta
- 2 cloves fresh garlic, peeled and coarsely chopped
- 1/4 cup extra virgin olive oil
- 1 jalapeño, coarsely chopped
- 2 avocados, pitted and coarsely chopped
- 1/2 cup fresh cilantro leaves, plus extra for sprinkling
- Juice and zest of one lime
- Pinch of sea salt
- 2 to 4 T water (if needed)
- 15 oz. can organic black beans, drained and rinsed
- 4 plum (aka Roma) tomatoes, chopped
This looks awesome! I’m one of those people who can’t do too much cilantro… think I’d be able to skip that?
Thanks, Tamara!! I think you could definitely leave out the cilantro. You may want to add a different spice that you do prefer, or even just a pinch or two of all-purpose seasoning just to give it a little more flavor. Let me know how it turns out!
