Bring on the margaritas and lime!
This salsa is just what you need to spice up your next meal.
We first enjoyed it on egg tacos. YUM!
Of course, it also makes an excellent dip for veggies or chips. Or use it to add a little kick to burritos, bean soups, Mexican salads…you name it!
Spicy Salsa Verde
Ingredients:
- 5 tomatillos, husks removed (if needed) and coarsely chopped
- 2 cloves fresh garlic, peeled and coarsely chopped
- 1 jalapeño, coarsely chopped*
- 1 small red onion (or 1/2 medium), peeled and coarsely chopped
- Juice and zest of one lime
- 1/2 cup chopped fresh cilantro, plus extra for sprinkling
- Sea salt, according to taste
*I used a fairly large jalapeño and it was SPICY. I love spicy, but if you prefer a more medium salsa, you may want to go with half a jalapeño. If you prefer mild, you can omit it altogether, or just put in a sprinkle.
Combine all of the ingredients in a food processor or blender, and blend until it reaches your desired consistency. Sprinkle with extra cilantro, if desired.
