It’s beginning to feel a lot like summer here in north Texas. Or, rather, it’s beginning to feel a lot like the way summer feels in normal parts of the world — beautiful, sunny, and around 80 degrees F.
Perfection.
As a Virginia native, I miss these kind of gorgeous days. I’ve learned to enjoy them while I can here in Texas, as it is sure to only get hot, hot, and hotter.
At any rate, combine this summer weather with an intense morning workout, and I needed something cool, creamy, and refreshing.
I needed froyo.
I knew this couldn’t be just any froyo…as much as I adore my past chocolaty and sweet frozen yogurt creations, I was in dire need of invigoration.
I needed zest.
Lime zest.
You also may remember from my recent guacamole hummus adventure, that I’ve been in possession of a few avocados that needed to be used this week.
I was now down to one avocado.
For those keeping count, that makes one avocado, a craving for froyo, and a need for a zesty pick-me-up.
I’m happy to report that this recipe fit the bill perfectly!
Also, for those of you that don’t like avocado (I used to be one of you; I understand), have no fear: you seriously cannot taste it! However, what you do get from the avocado in this recipe is its lovely creaminess along with its amazing health benefits. After all, avocados host an impressive array of phytonutrients and supply a good dose of bone-supporting vitamin K, heart-healthy fiber, vitamin C, and vitamins B5 and B6. One avocado even contains more potassium than a medium banana! It’s a win-win!
Avocado and Lime Frozen Yogurt
(Serves 2)
Ingredients:
- 11 oz. plain Greek yogurt (make your own!)
- 1 avocado, pitted and peeled
- 1 small to medium lime, juiced
- 1 heaping T of raw honey
- Pinch of sea salt
