You say potato, I say…cauliflower.
That’s right.
Cauliflower.
I’ve already expressed my sentiment that cauliflower just may be the unsung hero of the vegetable world. But even if you’re like me and you do recognize it’s amazing health benefits, you still might find yourself searching for new and creative ways to serve it.
Well, search no further. Here’s a simple, quick, and nommy recipe to add to the mix!
And, if you’re feeling especially frisky, you can even test it out on others and see if they notice that’s it’s NOT mashed potatoes. 😉
Mashed Cauliflower with Garlic and Rosemary
Ingredients:
- 1 head cauliflower, steamed
- 2 to 3 cloves fresh garlic, chopped
- 1/3 cup plain Greek yogurt
- 2 T extra virgin olive oil
- Sea salt, according to taste
- Pinch of crushed red pepper
- 3 full sprigs of fresh rosemary, stems removed
As always, feel free to experiment. After all, that’s the best part — well, besides nomming it up, of course. 😉 You may want to substitute the garlic and rosemary with your own favorite seasonings. (Yes, yes, believe it or not, I do understand that not everyone shares my rosemary obsession.)
