What can I say? It was the end of a looooooong Friday at the end of a looooooong week.
I neeeeeeded chocolate.
Ooey, gooey chocolate!
However, I also had my prized obsession rosemary in my possession and needed to use it while it was still fantastically fragrant and fresh.
So, what’s a girl to do?!?
You guessed it!
Chocolate + rosemary, baby!!
Now, not only is this quite possibly the most perfect flavor combination in existence, but my hubby had also just brought home a batch of fresh milk from a nearby dairy farm.
What could possibly be better than a molten chocolate and rosemary cake?!?
Chocolate + rosemary + farm fresh cream — that’s what!

Dark Chocolate and Rosemary Lava Cake
(Serves 4)
Ingredients:
- 1/4 cup date sugar
- 2 full sprigs rosemary, stems removed
- 3 eggs
- 1/4 cup whole wheat pastry flour
- 1/4 cup virgin coconut oil
- 1/4 cup unsweetened applesauce
- 3.5 oz extra dark chocolate bar (I used 85% dark)
- whole raw milk/cream (optional)
