Okay, okay…so I know the idea of avocado in a frosting may sound a little strange, but you just gotta try it!!
For those that don’t like avocado, have no fear, you seriously can’t taste it! (I happen to love avocado now, but I used to be one of you…so, I get it.)
That’s what makes this even better! You get a nommy, minty frosting, but with all the health benefits of coconut and avocado!!
Plus, it adds a unique color twist to any of your favorite recipes.

Bring back a bit of the ’70s in all its avocado-green glory, and nom this up!
Mint Avocado Frosting
Ingredients:
- Flesh of 2 medium, ripe avocados
- Juice of 1/2 lemon (this is to help prevent the avocado from browning)
- 2 medium super ripe bananas, peeled
- Handful of baby spinach leaves (for an extra boost of nutrient-rich green!)
- 1 tsp. pure peppermint extract
- 2 T virgin coconut oil
- 2 T raw coconut butter (or make your own!)
- 1 T raw honey
Combine all of the ingredients in your food processor and blend until smooth.
Spread atop your favorite cake (like this whole grain mint chocolate cake of goodness), cupcakes, scones…you name it! 🙂
