After DAYS of traipsing around Bangkok, we FINALLY found a power converter for our Vitamix!!
Huzzah!!
Now, in the spirit of full disclosure, I should mention that this particular recipe was actually created before we even left for Thailand. However, it is the primary reason we have been so desperately seeking a way to use our Vitamix now that we are here in 220V land! After all, once you taste amazingly delicious, homemade ice cream that only takes five ingredients and thirty seconds to make…well, you simply can’t go back to life without it!
For those without a Vitamix, have no fear. I do think you could easily make this in a food processor. However, it may come out as more of a milkshake/smoothie, rather than ice cream. (Behold, the power of the Vitamix!! Mwahahahaha!!! Ahem…) I’m sure you could also mix everything together, and then place it in an icecream maker, too (although it will then take longer than thirty seconds, of course…VITAMIX FOR THE WIN!!! Mwahahahaha!!! Erm…Sorry…I just can’t help myself.)
My next plan is to try this recipe with heavy whipping cream…and one of the many fruits that abound here in BKK!

Thirty-Second Nectarine Ice Cream
Ingredients:
- Milk (whole, preferably raw) - 1 cup
- Vanilla extract (pure) - 1 T
- Sugar (pure) - 1/8 cup
- Salt (pure) - Pinch or two (this REALLY improves the solidity of the mixture!)
- Nectarines (sliced and frozen) - 15 oz.
Instructions:
Combine all of the ingredients in your Vitamix (or high-powered food processor) in the order listed, and secure the lid.
Select Variable 1.
Turn the machine on, and quickly increase the speed to Variable 10, then to High. Use the tamper to press the ingredients into the blades.
In about 30 seconds, the sound of the motor will change and four mounds should form. (Be careful not to overmix, or melting will occur.)
That's all there is to it!
