Each day here in Texas just seems to get hotter. And I know the summer has only just begun.
Sigh.
So, naturally, as you could probably tell from my watermelon cake of towering goodness, this insane heat is leading me to seek out anything and everything that I associate with being cool and refreshing.
In fact, that’s exactly how this recipe came to be.
In a moment of heat-induced desperation, I combined everything seemingly refreshing that I had on hand and held my breath that it would offer some sort of relief.
I’m happy to report that it passed on all levels: cool, refreshing, healthy, and nommmmmmyyyy!
Cucumber Lemon Basil Frozen Yogurt
(Serves 2)
Ingredients:
- 12 oz. plain Greek yogurt (make your own!)
- 1/2 large cucumber, coarsely chopped
- Juice and zest of 1/2 lemon
- 1/2 cup fresh basil leaves, coarsely chopped
- 1 T date sugar
Combine all the ingredients in a blender or food processor and blend until smooth.
Place the mixture in your ice cream maker (here’s mine) and follow the manufacturer’s instructions.
Let each bite help you forget just how horribly hot it is outside!
