I have a confession to make.
Until making this recipe, I don’t believe I’ve ever eaten a parsnip.
In fact, I wouldn’t have been able to guess what one even looks like.
So, how did I feel after my first time tasting these commonly overlooked veggies??
All I can say is: Parsnip, where have you been all my life?!?
Now, you could make parsnip fries and coat them with any of your favorite spices and flavors. However, I must say I particularly loved this honey-ginger combo! The flavors just seemed to meld together perfectly into one big, nommy batch of goodness!
And what about my professional taste-tester (aka the guinea pig hubby)??
Let’s just say this recipe makes enough for four. I ate one serving. We had no leftovers. I think you catch my drift. 😉
Not only are parsnips super scrumptious, but they are also brimming with vital nutrients, vitamins, and minerals! They are an excellent source of vitamin C, folic acid, pantothenic acid, copper, and manganese. Plus, they also happen to be packed with soluble fiber. In fact, just one cup of parsnips will give you 25% of your recommended daily fiber intake!
Needless to say, I’m looking forward to many new parsnip recipes to come! I think next time I may try them mashed!
Honey Ginger Parsnip Fries
(Serves 4)
Ingredients:
- 2 lbs. raw parsnips, peeled and sliced into “fries”
- 2 T virgin coconut oil
- Sea salt, according to taste
- Pinch of crushed red pepper
- 2 tsp. ground ginger (plus a pinch more for sprinkling)
- Zest from 1/2 lemon
- 1 1/2 T raw honey
Preheat the oven to 400 degrees F.
Toss the parsnip fries with the coconut oil, sea salt, crushed red pepper, ginger, and lemon zest. Spread them in an even layer on a large baking sheet.
Drizzle the honey evenly over the parsnips. Stir and flip them until they are evenly coated.
Bake for an additional 25 minutes, or until the parsnips are tender.
Remove from the oven and prepare to meet your new favorite vegetable!

I love the idea of making a batch to be served with homemade ketchup! Nothing beats fresh tomatoes!! I think they’d be great seasoned with garlic, sea salt, and oregano to blend with the ketchup, too. 🙂
