There are so many things I simply adore about this dressing.
Its versatility…
Its ease…
And its supreme nomminess, just to name a few!
You can pretty much mix whatever herbs you have on hand to match the salad of your choice. For example, we went with rosemary when making this for our Grilled Chicken and Watermelon Salad because
A) I’m obsessed with rosemary.
and
B) That’s what we had on hand.
It turned out beautifully. 🙂
Honey-Lime Dressing
(Serves 4)
Ingredients:
- Juice and zest of one lime
- 1/4 cup extra virgin olive oil
- 1 T raw honey
- 2 sprigs rosemary, mint, or cilantro leaves, coarsely chopped
- 1 clove fresh garlic, peeled and coarsely chopped
Combine all of the ingredients in your food processor and blend until well-combined.
Drizzle atop your favorite salad…although, I must warn you that you will be tempted to just slurp it right out of the food processor.
