Have I got a summer treat for you!! (New York’s hottest froyo is…Sorry. I couldn’t resist. I just love SNL!)
I’ve always, always loved cheesecake. In fact, I still sometimes have dreams of this peanut butter cup cheesecake that I had as a kid when we went to the “fancy restaurant” for a special treat. (I seriously need to try to recreate it ASAP!!)
My husband, on the other hand, has never really been a huge fan of cheesecake. Believe it or not, he’s actually said these words to me: “It’s not that I hate it; I just don’t really like it.”
Gasp!! I knooooow!

Of course, he hasn’t yet tasted my homemade cheesecake, so there’s hope yet that I can pull him back from the dark side. In fact, this recipe proved to be a great start.
He was ooooooooing and ahhhhhhhhing with each bite…and his dish (along with the ice cream maker!) were licked clean.
And what about fellow cheesecake devotees, like myself??
Trust me, you will not be disappointed. In fact, I think I just found the new cheesecake of my dreams.
Needless to say, I will definitely be enjoying this cheesecake goodness many, many times throughout this sweltering Texas summer.
Oh, who am I kidding?? I’ll be happily eating this deliciousness all year long! Especially since you may recall that our freezer just so happens to be chock-full of organic raspberries.
Mwahahahahahahaha!

Raspberry Cheesecake Frozen Yogurt
(Serves 2)
Ingredients:
- 1 cup organic raspberries
- 1/4 cup date sugar
- 1 cup yogurt cheese (you could probably substitute with a mix of Greek yogurt and cream cheese, if needed…just be on the lookout for any additives [i.e. nonfood] in the cream cheese)
- 1/2 tsp. fresh lemon juice
- 1 tsp. pure vanilla extract
In a medium bowl, combine the raspberries and date sugar. Refrigerate this mixture for about 10 minutes to allow juices to develop.
Place the mixture in your ice cream maker (here’s mine!) and follow the manufacturer’s instructions.
When the frozen yogurt has reached your desired consistency, transfer it to serving bowls.
