If you have perused this blog at all, you are probably already well aware that I have a deep love for all things pesto.
Although I’ve experimented with tons of ingredients in the past – and with great success – I feel this one is the most unique. Albeit a bit unexpected, all of the flavors blended together beautifully to give the pesto a nommy Mediterranean flair.
And you know how I feel about Mediterranean food. 🙂
As with all pesto, it’s not only delicious, but also a snap to make AND incredibly nutritious!
Rosemary and Mint Pesto
Ingredients:
- 1 large bunch of fresh rosemary (about 12 large sprigs), stems removed
- 6 sprigs fresh mint, stems removed
- 1 and 1/2 oz. Feta cheese
- 1/3 cup raw walnuts
- 2 cloves garlic, peeled and coarsely chopped
- 3/4 cup extra virgin olive oil
- Juice of 1/2 lemon
- Sea salt, according to taste
- Pinch of crushed red pepper
Combine all of the ingredients in a food processor, and blend until smooth.
Enjoy on warm pasta, pasta salads, eggs, bruschetta, as a spread on sandwiches, or as a dip for your favorite veggies.
