Well, it’s official: summer is over! 🙁
That’s right, today was the first day back to school.
Sigh.
The good news is that I absolutely LOVE my kids and can’t wait to get to know them even better!! We definitely got off to a fantastic start; it’s going to be an awesome year!
Still, as wonderful as today was, summer — and its lax schedule — will be greatly missed.
So, in a swan song to summer, I now present to you a unique and amazingly nommy new froyo flavor: Avocado Blackberry.
Oh, who are we kidding?? We all know I’ll still be making froyo in January!! I’m simply addicted to the stuff; it knows no season!!
Whatever the season, you can feel good about digging into this tasty treat, featuring the incredible health benefits of both avocados and blackberries!
Blackberry Avocado Frozen Yogurt
(Serves 2)
Ingredients:
- 1/2 cup plain Greek yogurt
- 1 avocado
- 1 T raw honey
- Juice of 1/2 lime
- 1 cup organic blackberries
Combine all the ingredients, except the blackberries, in a blender or food processor and blend until smooth.
Place the mixture in your ice cream maker (here’s mine), and follow the manufacturer’s instructions.
Add the blackberries in the last five minutes of churning. Allow to churn until desired consistency is met.
Divide the frozen yogurt into two dishes and garnish with lime slices, if desired.
Dig in to nom-worthy, healthy deliciousness! 🙂
