It’s no secret that I absolutely adore cheesecake.
And when I say adore, I mean can’t-get-enough-savor-every-bite-often-even-dream-about-it!
Needless to say, after falling madly in love with my homemade Raspberry Cheesecake Frozen Yogurt, I knew exactly what I needed to do when I found myself staring at some yummy, organic blueberries just itching to be enjoyed!
After all, any time is a good time for froyo — especially cheesecake froyo!! 😉
Blueberry Cheesecake Frozen Yogurt
(Serves 2)
Ingredients:
- 1 cup frozen, organic blueberries
- 2 to 3 T date sugar, depending on your sweet tooth!
- 1 cup plain yogurt cheese (Make your own!…Or you can probably substitute with a mix of Greek yogurt and cream cheese, if needed…just be on the lookout for any additives [i.e. nonfood] in the cream cheese.)
- Juice of 1/2 small lemon
- 1 tsp. pure vanilla extract
In a medium bowl, combine the blueberries and date sugar. Allow this mixture to set for about five to ten minutes to allow juices to develop.
Meanwhile, in a separate bowl, mix together the yogurt cheese, lemon juice, and vanilla extract.
Fold the blueberries and sugar into the yogurt cheese mixture.
Place the mixture in your ice cream maker (here’s mine!), and follow the manufacturer’s instructions.
When the frozen yogurt has reached your desired consistency, transfer it to serving bowls.
Sprinkle with extra blueberries, if desired.
Savor each bite of creamy, nommy goodness! 🙂
