So, remember yesterday’s post on the super nommy Blackberry Avocado Salsa?? You didn’t think I’d leave you hanging without a recipe for how to enjoy it, did ya?
When I started making the salsa, I wasn’t sure what I wanted to actually do with it. At first, I thought I would slather it on grilled chicken sandwiches using the sprouted grain buns we had leftover from our nom-worthy Greek Turkey Burgers.
But that just didn’t feel right. Something was off.
Then, I remembered we also had some yummy sprouted grain tortillas in the freezer.
BINGO!!
I know for some there might not seem to be much difference between a bun and a wrap…but, for some reason a grilled chicken wrap just sounded better.
At any rate, the hubby and I both seriously couldn’t get enough of these wraps!! Super yummy, healthy, and filling — the best of all worlds!
Grilled Chicken Wrap with Blackberry Avocado Salsa
(Serves 4)
Ingredients:
- 1 lb. skinless boneless chicken breast halves
- 2 to 3 handfuls raw, baby spinach
- 4 large sprouted whole grain tortillas
- 1 batch Blackberry Avocado Salsa
Grill the chicken using an outdoor grill or a trusty George Foreman grill.
Cut each breast diagonally into strips.
Fill each tortilla with evenly with each ingredient.
Wrap the tortillas up and enjoy! 🙂
