After falling in love with my Healthy Yogurt Cheese Frosting over the summer, I knew it was only a matter of time until I tried more flavor combinations.
And what could be more perfect this time a year than pumpkin!
How about pumpkin with hints of gingerbread??
Oooooooo, yes, please!!
Just imagine all the nommy goodies we can top with this deliciousness! Of course, there is absolutely no shame in just eating it right out of the bowl, too!
NOM! NOM! NOM!
Pumpkin Ginger Yogurt Cheese Frosting
Ingredients:
- 3/4 cup yogurt cheese (make your own!), brought to room temperature (you can substitute with cream cheese, if needed, but be on the lookout for additives [i.e. nonfood] in the ingredients)
- 1 tsp. ground ginger
- 1/2 tsp. ground cinnamon
- 2 to 3 T pure blackstrap molasses
- 1/4 cup mashed, cooked pumpkin
- 2 tsp. pure vanilla extract
- 1/4 cup coconut butter (make your own!)
Stir all of the ingredients together in a large bowl. Once blended, whip with an electric mixer until fluffy.
If desired, place the frosting in a zip-top sandwich bag. Cut the tip off one of the bottom corners of the bag. Gently push the frosting out of the cut tip and swirl it onto cupcakes, baked oatmeal, cakes, or any nommy confection of your choice!
As always, be sure to lick the beaters and every last inch of the mixing bowl clean, too, of course. 😉
