So, you think you know meatloaf?!?
(Ahem…the food, that is…not the singer.)
Well, prepare to be stunned!
And by stunned, I mean dazzled by a sweet-spicy, succulent goodness that will make your palate sing.
Okay…so maybe I’m getting just a bit melodramatic…
Then again, maybe not.
After all, it did pass the HUBS test with flying colors! Now, you all know the hubby likes just about anything and everything we nom, but this time, I think he seriously complimented me at least eight times on how amazing this was.

I have to agree, too. It was seriously hard to stop ourselves from eating the entire loaf in one sitting.

Curried Turkey Meatloaf
(Serves 6)
Ingredients:
- 1 1/4 lbs. ground turkey breast
- 1/2 cup oat bran
- 1/2 tsp. ground turmeric
- 2 tsp. curry powder
- 1 tsp. ground cumin
- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1 cup freshly grated carrot
- 1/2 cup green peas
- 1/2 cup raisins
- 1 egg, whisked
- 1/4 cup chopped fresh cilantro and/or mint
- 1/3 cup apricot preserves
- 3 tsp. dijon mustard
- 1/2 tsp. curry powder
Preheat the oven to 350°F.
Combine the first twelve ingredients in large bowl, and mix well.
Press the mixture evenly into a greased loaf pan.
Bake for 45 minutes. Remove from the oven.
Stir the preserves, mustard, and 1/2 tsp. curry powder in small bowl until well-blended. (I’m sure you could replace this glaze with a chutney of your choice, if needed.) Spread the glaze atop the meatloaf.
Return the loaf to the oven and bake for an additional 20 minutes.
Remove the loaf from the oven and allow it to cool in the pan for about 10 minutes.
Slice and serve!
