Best. Mashed Cauliflower. Ever.
I know, I know, I already professed my undying love for both of my previous mashed cauliflower recipes — but, seriously, this one is utterly AMAZING!!
Of course, this may have a little something to do with my obsession for sun-dried tomatoes. What can I say? They can transform any and every meal into something extraordinarily tasty!!
OH, and not only is this dish to-die-for-delicious, but it’s incredibly easy to make, too!
Who could ask for anything more??
Sun-dried Tomato Mashed Cauliflower
Ingredients:
- Cauliflower - 1 head, steamed
- Garlic (fresh) - 2 cloves, chopped
- Greek yogurt (plain) - 1/3 cup
- Olive oil (extra virgin) - 1 T
- Tomatoes (sun-dried) - 5 oz., drained
- Salt (pure) - (according to taste)
- Red pepper (crushed) - pinch
- Basil (fresh) - 5 large leaves, coarsely chopped
Instructions:
Combine all of the ingredients, except the basil, using an immersion blender (I LOVE my Cuisinart), or food processor, until smooth. Add the basil, and pulse several times until it is evenly distributed.
Try to keep yourself from eating the whole bowl! Serve!
KeokaDecember 31, 2011I actually like to mash them them mix with cseehe etc pour in a pan and bake. More like a scalloped potato thing, but good. Since I can have sour cream and ranch dressing I like to mix those in to flavor it up. Tastes more like a loaded baked potato.
