It’s the moment I know many of you have been waiting for: today I’m super excited to present to you another great flavor to add to our homemade Larabar collection!
Thanks to so many of you for your sweet comments on here and on Facebook about how much you’ve enjoyed our previous flavors…and your encouragement to make more! It means more than you know.
Now, although I absolutely adore our German Chocolate and Oatmeal Raisin Cookie combos, I’ve been dying to try some new ones, too!
Why, you ask??
Well, first and foremost, they are incredibly yummy! They also happen to be insanely easy to make! OH, and they are the perfect thing to keep on hand for crazy, hectic days.
Not that we ever have those…right?? 😉
Sunflower Apricot Bars
Ingredients:
- Oats (rolled) - 2/3 cup
- Sunflower seeds - 1 cup, shells removed
- Apricots (dried and unsulfured) - 1 1/2 cups
- Cinnamon (ground) - 1 tsp.
- Vanilla extract (pure) - 1 tsp.
- Salt (pure) - Pinch or two
Instructions:
Place the rolled oats in a food processor and process until the oats are ground almost into a flour.
Add all of the remaining ingredients to the food processor and blend until the seeds are chopped and everything is well-combined.
Divide the mixture into six or seven equal portions. Place each portion in between two pieces of plastic wrap, or inside a zip-top sandwich bag, and then use your hand to shape it into a bar. Of course, you can form these into whatever shapes you want…stars, hearts, you name it! Or, you can always just eat it right off the spoon…a personal favorite of mine. ;)
These delicious babies can be stored in the refrigerator for several weeks (although we never manage to keep them that long around here!), or you can even freeze them!
