CAUTION: INCREDIBLE FUDGEY GOODNESS AHEAD!!!
Take that warning above seriously, NOMsters!! These brownies are out of this world!

To. Die. For.
I even took some to work and my colleagues were still raving about them a week later. (This, of course, made my little experimental chef heart sing!!!)
All that being said, I also think I should warn you not to let the name of these little miracle bites fool you. The truth is, they don’t taste a thing like pumpkin. (Now, I happen to adore pumpkin…but for those of you that don’t…well, you’re welcome!)
So, then why even use the pumpkin, you ask?? Well, it just so happens to make these rich brownies even more insanely moist and fudgilicious!!
If you don’t happen to have pumpkin on hand, I’m sure you could replace it with sweet potato, squash, or even banana! In fact, be sure to let me know in the comments if you try any of those combos! I’d love to hear how they turn out! 🙂
Pumpkin Fudge Brownies
Ingredients:
- Flour (whole wheat pastry) - 1 cup
- Cocoa powder (unsweetened) - 1/2 cup
- Baking powder (aluminum-free) - 1/2 tsp.
- Salt (pure) - 1/2 tsp.
- Cinnamon (ground) - 1 tsp.
- Coconut sugar - 1 1/4 cup
- Pumpkin purée - 1 cup
- Coconut oil (virgin) - 1/3 cup, melted
- Milk - 1/4 cup
- Vanilla extract (pure) - 1 1/2 T
- Chocolate chips (85% cacao) - 1 cup
Instructions:
Preheat the oven to 330 degrees F.
In a large bowl, combine the first five ingredients, and mix well.
In a separate bowl, mix together all of the remaining ingredients, except the chocolate chips.
Add the wet ingredients to the dry ingredients and stir until the dry ingredients are moistened. Fold in the chocolate chips.
Pour the batter evenly into a greased 8x8 pan. (This produces super fudgey brownies; use a larger pan if you'd like the brownies a little less thick and fudgey.)
Bake for about 25 minutes.

made these to the recipe..but used 1 cup raw sugar instead…..and they passed the husband test ,,,lol
