Ever since I tried Tropical Traditions’ Organic Whole Grain Einkorn Flour in our Kalamata Rosemary Bread, I’ve been dying to experiment with it again in another yeasty creation!
The result?
One incredible pizza crust!
You see, much like my story with yeast bread, I used to make pizza crust all the time way back in my early years as a baker. Yet, somehow over the past few years, I inexplicably fell out of the habit.
I’m not kidding when I say inexplicably, either! I seriously have no idea why — or even how — I fell off the pizza crust wagon.
I mean, really, after tasting the amazing goodness of freshly baked crust, how could I possibly stop making it??
Amnesia??
Lost time while trapped in an alternate universe??
We may never know.
BUT, the good news for you and me is that my pizza crust baking days have returned — and this time they are back for good!
Whole Grain Einkorn and Oat Pizza Crust
Ingredients:
- Flour (whole grain einkorn) - 1 1/3 cup
- Oat bran - 1/3 cup
- Yeast - 1 1/2 tsp.
- Date sugar - 1 tsp.
- Salt (pure) - 1/4 tsp.
- Water - 3/4 cup (warmed to 100-110 degrees F)
Instructions:
Dissolve the yeast and date sugar in the warm water in a large bowl. Let it stand for 5 minutes.
Add half of the flour, all of the oat bran, and the salt to the yeast mixture, and stir for about 30 seconds. Add the remaining flour to form a soft dough.
Turn the dough onto a flat surface sprinkled with flour. Knead the dough for about 5 minutes to form a smooth, satiny ball. (As you knead, add a little more flour, if needed, to prevent the dough from sticking to your hands.)
Place the dough in a large, lightly greased bowl. Turn the dough to coat its top. Cover the bowl with a clean kitchen cloth.
Allow the dough to rise in a warm place, free from drafts, for about 1 hour (or until doubled in size).
Punch the dough down; cover and let it rest 5 minutes.
On a lightly floured surface, roll the dough into a 12-inch circle.
Place the dough on a lightly greased pizza pan or baking sheet. Fold over and crimp the edges of the dough with your fingers to form a crust.
Cover the dough and allow it to rise for about 30 minutes, or until puffy.
Your dough is now ready! Throw on your favorite toppings, pop it in the oven, and prepare yourself for epic goodness!
