After all, what’s not to love?? They are super quick (and easy!) to make, incredibly yummy, and oh so versatile.
However, as much as I adore eggs, the truth is that even someone as egg-obsessed as I am can still get tired of the same old scramble. That’s when their aforementioned versatility comes in very handy!
So, the next time you find yourself in an egg funk, be bold and get a little avant-garde (doesn’t that word just make you feel a little extra fancy??)! Tantalize your taste buds with this yummy scramble infused with the fresh flavors of orange and mint!

Orange and Mint Scrambled Eggs with Feta
Ingredients:
- Coconut oil (virgin) - 1 T
- Eggs - 5
- Oranges - juice and zest of 1, plus extra for garnish
- Salt (pure) - pinch or two
- Mint (fresh) - 1/4 cup chopped, plus a bit more for sprinkling
- Cheese (Feta) - for sprinkling
Instructions:
Heat the oil in a large skillet over medium heat.
In a medium bowl, whisk together the eggs, salt, mint, orange juice, and zest.
Pour the egg mixture into the skillet, and scramble the eggs over medium heat until cooked through.
Sprinkle the feta over the eggs. Garnish each serving with fresh orange slices and mint, if desired.
