Mexican Beef and Rice
Ingredients:
- Coconut oil (virgin) - 1/2 T
- Garlic (fresh) - 2 cloves, peeled and diced
- Beef (ground) - 1 pound
- Corn (non-GMO) - 10 oz. kernels (fresh or frozen)
- Tomatoes (Roma) - 7, chopped
- Salt (pure) - according to taste
- Chili powder - 2 T
- Cumin (ground) - 1 tsp.
- Oregano (dried) - 1 tsp.
- Rice (brown, sprouted) - 2 to 3 cups cooked
- Limes - Juice of one
- Cheese (Cheddar) - grated, for sprinkling (optional)
- Guacamole - for topping (optional)
- Greek yogurt (plain) - for topping (optional)
Instructions:
Heat the coconut oil in a large skillet over medium-high heat. Add the garlic to the pan and sauté until lightly golden.
Add the beef to the pan, and stir until crumbled and browned. Stir in the vegetables and seasonings. Cook until the vegetables are tender.
Serve the beef mixture over a bed of rice. Top with fresh lime juice, guacamole, Greek yogurt, and cheese.
