I have a confession to make: I don’t like mango.

Wait, Wait…I should clarify. I don’t like fresh mango. Dried mango, on the other hand, is a completely different story. If left to my own devices, I can down an entire bag of their natural, fruit roll-up goodness in mere moments.
When the hubs came home with several bags of dried mango that he had scored on sale, I decided we had enough for me to enjoy by the handful and sprinkle throughout a batch of muffins.
The results did not disappoint.
In fact, the hubs said these muffins need to be classified as dangerously delicious.

I have to say that I agree.
After all, what’s not to love??
Light and moist, with just the right amount of texture and sweetness.
Chewy coconut goodness.
And of course: sweet, luscious mango.
Need I say more??
Whole Wheat Coconut Mango Muffins
Ingredients:
- Flour (whole wheat pastry) - 1 cup
- Baking powder (aluminum-free) - 1 tsp.
- Sugar (pure) - 1/4 cup
- Coconut (unsweetened and shredded) - 1/2 cup (plus extra for sprinkling)
- Salt (pure) - 1/4 tsp. (plus extra for sprinkling)
- Allspice (ground) - 1/2 tsp.
- Coconut oil (virgin) - 1/8 cup, chilled
- Yogurt whey - 3/4 cup (substitute with buttermilk or milk, if needed)
- Bananas - 1 ripe, mashed
- Eggs - 2
- Mango (dried) - 1 cup chopped
Instructions:
Preheat the oven to 375 degrees F.
In a large bowl, mix together the pastry flour, baking powder, sugar, coconut, salt, and allspice.
Cut the coconut oil into the flour mixture using a pastry cutter (or two knives).
In a separate bowl, whisk together the whey, mashed banana, and eggs.
Add the wet mixture to the dry mixture, and stir until the dry ingredients are just moistened.
Fold in the dried mango.
Evenly distribute the batter into a greased muffin tin.
Sprinkle each muffin with a bit of coconut and sugar, if desired. Bake for 16-18 minutes.
Remove the muffins from the oven, and allow them to cool in the tin for about 5 minutes. Transfer the muffins to a wire cooling rack.
These delectable bites of coconut goodness can be served warm or at room temperature.
