Beef and Spinach Pasta Sauce
Ingredients:
- Coconut oil (virgin) - 1 T (extra virgin olive oil would work great in this recipe, too!)
- Garlic (fresh) - 2 cloves, peeled and chopped
- Beef (ground) - 1 pound
- Tomatoes (crushed) - 28 oz.
- Wine (red) - 1/2 cup
- Salt (pure) - pinch or two
- Red pepper (crushed) - pinch
- Basil (dried) - 1 T
- Spinach (baby) - 3 to 4 cups
Instructions:
Heat the oil in a large saucepan over medium-high heat.
Add the garlic to the saucepan, and sauté until golden.
Stir in the beef. Sauté until lightly browned.
Add the tomatoes, wine, and seasonings to the pot. Reduce the heat, cover, and simmer for about 20 minutes.
Stir in the spinach. When the spinach has wilted, remove the saucepan from the heat.
Serve over your favorite pasta with a sprinkle of mozzarella!
