I love our Vitamix for so many reasons: hummus, pesto, mashed potatoes, guacamole, puréed soups…so much YUM!
But, oh, homemade ice cream.
Homemade ice cream is absolutely the best part.
You may remember our thirty-second nectarine ice cream. You may also remember that I mentioned I wanted to try ice cream again with heavy whipping cream instead of whole milk. Well, since then, I am happy to report that we have both tried it and loved it!
In fact, we’ve had tons of delicious fun trying out all sorts of new flavor variations. It’s safe to say that you may want to gear up for several delectable ice cream recipes in your near future.
For today, we’ll start with a tried and true flavor combination: Peaches and Cream.
Be sure to let me know what you think in the comments! Also, any requests for new flavors you would like for me to try?
Peaches and Cream Vitamix Ice Cream
Serves 2
Ingredients:
- Cream (heavy/whipping) - 1 cup
- Vanilla extract (pure) - 3 T
- Sugar (pure) - 2 T
- Peaches (frozen) - 16 oz. (455 g)
- Salt (pure) - Pinch
Instructions:
Option 1: Make-Ahead Mix (This will result in firmer ice cream.)
Mix the cream, vanilla, and sugar in the Vitamix until well-blended.
Place the mixture evenly in a shallow tupperware container, and then freeze it for several hours.
When ready to serve, blend the frozen mixture along with the peaches and a pinch of salt. It will be very thick. Blend on the variable setting and slowly work your way up in speed while using the tamper to push the frozen peaches down until you reach your desired consistency.
Option #2: Thirty Seconds to Get in My Belly (This will not be quite as firm as the make-ahead mix, but will still be much firmer than soft-serve.)
Pile all of the ingredients into the Vitamix.
Blend on the variable setting and slowly work your way up in speed while using the tamper to push the frozen peaches down until you reach your desired consistency.
We have had it both super smooth and with peach chunks throughout; both versions are equally delicious. The choice is yours!
